Week 1: Rose Infused Cake

They say that the best way to accomplish your goals is to just do it–they being Nike and it being sports, which I happen to be very very bad at. However, I think that this phrase fits pretty well with my personal goal of baking 52 cakes in one year. One. Cake. Every. Week.


I decided to start off this challenge in the most basic way possible by making a rose water infused cake to serve my friends during the Bachelor premiere. ROSE water cake and the Bachelor… needless to say, everyone accepted the invite to come and watch reality TV and eat cake.


Week one wasn’t a complete cake walk (get it??). Puns aside, my first attempts did come along with some pros and cons. Pros- I sustained zero oven burns/sugar crashes. Cons- my phone is thoroughly crusted in sugar from referencing the recipe over and over.

Final thoughts on the Rose Water Cake:

  • The rose flavor is very subtle.
  • Definitely a crowd pleaser.
  • Leftover and cold this tastes and feels exactly like the Meyer Lemon and Pistachio cake donut from Do-Rite.
  • This is kind of-maybe a healthier cake option on account of the batter being mostly nut flour (the extra protein negates the two sticks of butter and cup of sugar, right??).
