Week 4: My Favorite No Bake Cheesecake

Rules are meant to be broken.


At the beginning of the challenge I set the parameter that I was only allowed to pull a recipe from a source once. Well, this week I had a hard time following that rule for a handful of reasons.


One, I was requested to make a cheese cake for a friend’s birthday dinner. Low on time, I reached for the next best thing–no bake cheese cake.

Two, this No Bake Cheesecake recipe is one of the first things I remember baking with my mom. In fact, I keenly recall pouring over the four page spread in Martha Stewart KIDS and begging my mom to get the ingredients to make it with me.

Three, Martha is a queen and everything she puts out is perfection.


As expected, this cake was creamy, lemony and balanced with the simple graham cracker crust. I definitely recommend this cake for someone who is new to “baking” or doesn’t want to heat up the kitchen with a hot oven.

  • Birthday boy approved.
  • This is a recipe worth breaking the rules for.
