I’ve said it before, and I’ll say it again. As much as I have enjoyed making all these cakes, I’ve been itching to challenge myself with other varieties of baking. With Thanksgiving last month, my will was tested not one, not two, but three times! For weeks 44 and 45 I stayed true to the challenge and brought, never the less, festive cakes to my pre-turkey day shindigs. For the big day, I swallowed my desires to make an apple pie, so as not to stray from making cakes.
Because it was Thanksgiving, I wanted to include ingredients with a nod towards the main meal, think corn muffins and cranberries. I ended up find this recipe for Cranberry Cornmeal Cake. And let me tell you, it was killer with a cup of coffee and homemade mascarpone and cranberry whipped cream on top.
Since we are coming to a close on the project (6 more cakes left!), I’ve kept this post short and sweet. At this point, I’ve done enough talking about cake, and too be honest, I’m not sure there’s much left to say!
Final thoughts on week 46:
- I may or may not have made a pie in addition to this week’s cake.
- And I definitely had a slice of both.
